All 6 of these chords are built from a triad plus one extra note (a 7th) stacked on top. The interval formula (in semitones from the root) decides which kind you hear:

Major 7: 0, 4, 7, 11
Dominant 7: 0, 4, 7, 10
Minor 7: 0, 3, 7, 10
Diminished 7: 0, 3, 6, 9
Half-Diminished 7: 0, 3, 6, 10
Minor-Major 7: 0, 3, 7, 11

Major 7 and Minor-Major 7 share a Major 7th on top but differ in their triad; Dominant 7 and Half-Diminished 7 share a Minor 7th on top but differ below; Diminished 7 is the only symmetrical chord, stacked entirely in minor thirds.
